How to Choose Gluten-Free Flour
Use the flour specified in the recipe. An all-purpose blend is not automatically interchangeable with almond or chickpea flour.

Three different jobs
- Packaged blend: check its intended use and included binders.
- Oat flour: choose a recipe designed for it instead of treating it as a universal substitute.
- Almond and chickpea flour: their properties and flavors differ, so proportions matter.
One blend does not do every job
A tortilla needs flexibility, a waffle needs a different structure, and a roll needs to hold its shape. Similar ingredients can require different proportions and handling. Do not carry ratios from one dish to another by guesswork.
Ounces are not cups
Weight ounces (oz) measure mass; fluid ounces (fl oz) measure volume. For flour, use a scale and the amounts in your recipe. Different flours do not share one universal grams-per-cup conversion.
